Vegan Queso Recipe

This vegan queso recipe makes a BIG batch making it perfect to bring to a party or to store some in the freezer for later. ⁠

Serve with chips, with tacos, grain bowls or really anything else you want! ⁠


  • 2 cups soaked and rinsed cashews
  • 1.5 cups boiled water
  • 2 cups white potatoes, chopped
  • 1 jalapeno, diced and deseeded divided
  • 1 tsp salt to start add more for desired taste
  • 1 tsp garlic powder
  • 1 tomato, diced
  • 1 red onion, diced
  • 3/4 cup nutritional yeast
  • 1 tbsp cumin
  • 1 tbsp chili powder
  • 4 cloves of garlic, minced
  • 1 tbsp avocado oil


  1. In a large saucepan on medium heat, add avocado, garlic, onion, tomato, garlic powder, cumin, and chili powder
  2. Once garlic and onion have softened, add potatoes, boiled water, cashews, 1/2 jalapeno, salt, and cook until the potatoes are softened
  3. Add everything in the saucepan to a food processor plus the nutritional yeast and blend until smooth. Add more water if it needs help blending
  4. Top with other 1/2 of the jalapeno
  5. Serve with corn chips, on tacos or with a burrito bowl
