Sweet Potato Kale Stew

This African-Inspired Sweet Potato Kale Stew dish is very nourishing, comforting, and healthy. Plus it has peanut butter in it so you can't go wrong!

You could even cook it on low in a slow cooker if you don't have time to make it right at dinner time.


  • 4 cups frozen kale
  • 2 cups water
  • 2 cups vegetable broth
  • 1 can cooked chickpeas
  • 1 small red onion, diced
  • 2 large sweet potatoes, chopped
  • 1/4 cup peanut butter
  • 1 tbsp garlic powder
  • 1 tbsp cumin
  • 1 tbsp paprika
  • 2 tbsp tomato paste
  • salt and pepper to taste


  1. Add all the ingredients to a large saucepan and bring to a boil then reduce heat and cover with a lid until sweet potatoes are soft.
  2. Enjoy!
