Summery Salad
Ingredients:
- 1 tangerine/clementine, peeled
- 1/4-1/2 cup blackberries or berries of choice
- 1 cup cooked chickpeas
- 1/2 pear, diced
- 2 cups spring mix
- 1/2 avocado, sliced
- 2 tbsp hemp seeds
Dressing:
- 1 tbsp apple cider vinegar
- 1 tbsp balsamic vinegar OR fresh orange juice (or citrus fruit of choice)
- 1 tsp-1 tbsp olive oilsea salt to taste
- Note: don't be afraid to play around with the ratios. If you want it to be less tangy then add less of the vinegars and more olive oil.
Directions:
- Combine all salad ingredients
- Combine all the dressing ingredients
- Mix dressing into salad
