Summery Salad

Ingredients:

  • 1 tangerine/clementine, peeled
  • 1/4-1/2 cup blackberries or berries of choice
  • 1 cup cooked chickpeas
  • 1/2 pear, diced
  • 2 cups spring mix
  • 1/2 avocado, sliced
  • 2 tbsp hemp seeds

Dressing:

  • 1 tbsp apple cider vinegar
  • 1 tbsp balsamic vinegar OR fresh orange juice (or citrus fruit of choice)
  • 1 tsp-1 tbsp olive oilsea salt to taste
  • Note: don't be afraid to play around with the ratios. If you want it to be less tangy then add less of the vinegars and more olive oil.

Directions:

  1. Combine all salad ingredients
  2. Combine all the dressing ingredients
  3. Mix dressing into salad
