Spicy Cheesy Sweet Potato Bowl

You MUST try this Spicy Cheesy Sweet Potato Bowl!!

This bowl is the perfect blend of a little spice and cheesy goodness! Plus its VEGAN and gluten-free!


Sweet Potato & Chickpea Dressing

  • 1 tbsp maple syrup
  • 2 tbsp dijon mustard
  • 1 tbsp olive or avocado oil
  • 1 tbsp garam masala
  • sea salt and pepper to taste

Main Ingredients

  • 1 medium sweet potatoes peeled and chopped
  • 1 can chickpeas rinsed
  • 1/2 cup raw pecans

Cheese Sauce

  • 1 cup soaked cashews
  • 1 tbsp oil
  • 2-3 cloves of garlic
  • 1/4 cup nutritional yeast
  • 1/4 cup milk of choice
  • 1 tsp ground turmeric
  • 1 tsp chili powder
  • 1 tsp cumin
  • 1 tbsp dijon mustard
  • sea salt and pepper to taste
  • water or milk as needed to help blend


  1. Preheat the oven to 350
  2. Line 2 baking sheets with parchment paper
  3. Add the sweet potato to one baking sheet and the chickpeas to another baking sheet
  4. Mix all the sweet potato dressing ingredients together can then cover the chickpeas and sweet potatoes
  5. Place in the oven for 30 minutes 
  6. In the meantime add all the cheese sauce ingredients to a food processor and blend until smooth. Also, add water or more milk slowly as needed to help blend. 
  7. About 5-8 minutes before the oven timer goes off, add the pecans to one of the baking sheets and cook until toasted 
  8. Once the sweet potatoes are cooked and the pecans are toasted mix the chickpeas, pecans and sweet potatoes 
  9. Serve with grain of choice or greens and top with cheese sauce
