Spice up your breakfast with this Mediterranean Toast Recipe

If you are looking for a savory Mediterranean toast recipe, light lunch, or simple appetizer then you will love this toast recipe! You can also add shredded chicken or more chickpeas for added protein. Keep reading below for the recipe and enjoy!

Ingredients:

2 slices of bread of choice

1-2 fresh basil leaves, diced

2-3 cherry tomatoes, sliced in half

1-2 tbsp goat feta

3-5 olives of choice, diced

2 tbsp of hummus (or as you prefer). Check out my hummus recipe here!

1 tbsp olive oil

1 tbsp balsamic vinegar

Directions:

  1. Toast bread
  2. Add olive oil to a frying pan and head cherry tomatoes for about 5 minutes on medium heat
  3. Spread hummus on toast and then top with goat feta, tomatoes, basil, and olives and drizzle with balsamic
