Simple Healthy Stew
If you are looking for a healthy yet comforting meal then you need to check out this super simple healthy stew recipe!
One of the things I have always found challenging about stew was finding high-quality stewing beef that is actually tender so I decided to skip that step altogether and use ground beef instead! And let me tell ya, it did not disappoint and I may actually like this combo more!
Another great thing about this healthy stew is that it is gluten-free and dairy-free and can be thrown together fairly easily, only using one pot!
So let’s get started!
INGREDIENTS
- 1 large carrot peeled and chopped
- 1 parsnip peeled and chopped
- 1-2 celery stalks chopped
- 2 small potatoes (or 1 large) chopped
- 1/2 white onion chopped
- 1 package ground beef
- 1 tbsp oil or butter
- 1 tsp paprika
- 1 tsp garlic powder or minced garlic
- 1 tsp rosemary
- 1 tsp oregano
- 1 carton beef broth
- 2 cups water
- sea salt and pepper to taste
INSTRUCTIONS

Add your butter or oil to a large pot on medium heat

Add onion and cook until translucent

Next, add the beef and stir until cooked

Add in oregano, paprika, garlic, rosemary, salt and pepper, and stir

Once the beef is cooked add in the carrot, parsnip, celery, and potatoes

Then add in the water and broth. If you find your veggies aren't covered well enough, feel free to add a bit more water

Bring to a boil then reduce heat

Cook until vegetables are soft
