Simple Healthy Stew

If you are looking for a healthy yet comforting meal then you need to check out this super simple healthy stew recipe!

One of the things I have always found challenging about stew was finding high-quality stewing beef that is actually tender so I decided to skip that step altogether and use ground beef instead! And let me tell ya, it did not disappoint and I may actually like this combo more!

Another great thing about this healthy stew is that it is gluten-free and dairy-free and can be thrown together fairly easily, only using one pot!

So let’s get started!

INGREDIENTS

  • 1 large carrot peeled and chopped
  • 1 parsnip peeled and chopped
  • 1-2 celery stalks chopped
  • 2 small potatoes (or 1 large) chopped
  • 1/2 white onion chopped
  • 1 package ground beef
  • 1 tbsp oil or butter
  • 1 tsp paprika
  • 1 tsp garlic powder or minced garlic
  • 1 tsp rosemary
  • 1 tsp oregano
  • 1 carton beef broth
  • 2 cups water
  • sea salt and pepper to taste

INSTRUCTIONS

  • Add your butter or oil to a large pot on medium heat
  • Add onion and cook until translucent
  • Next, add the beef and stir until cooked
  • Add in oregano, paprika, garlic, rosemary, salt and pepper, and stir
  • Once the beef is cooked add in the carrot, parsnip, celery, and potatoes
  • Then add in the water and broth. If you find your veggies aren't covered well enough, feel free to add a bit more water
  • Bring to a boil then reduce heat
  • Cook until vegetables are soft
  • Enjoy!
