Simple Healthy Cashew Chicken
We all love getting takeout cashew chicken but sometimes it's not always the healthiest option so that is why I created this Simple Healthy Cashew Chicken. I wanted to recreate my favourite cashew chicken but in a way that was super simple and nourishing. This Asian- Inspired dish is not only full of flavour but also contains lots of healthy fats, proteins and veggies.
INGREDIENTS
Chicken
- 1 tbsp avocado oil
- 1 tbsp sesame oil
- 2 tbsp tamari
- 2 tbsp tapioca starch or flour
- 2 tbsp maple syrup
- 1 package chicken strips or sliced chicken breast (about 2 chicken breasts)
Veggies
- 1 head broccoli head, diced
- 1 large carrot, diced
- 1 cup snap peas
- 1/4 green onion, diced
- 2 cloves garlic, minced
- 1/2 tsp ground ginger
- 1 tbsp tapioca starch or flour
- 1 tbsp maple syrup
- 1.5 tbsp tamari
- 1 tbsp sesame oil
- 1 tbsp vinegar (I used apple cider vinegar)
- 1 tbsp water
- 1 tsp chili flakes or to taste
- 1 tbsp avocado oil
Misc
- 2 cups cooked sticky rice
- 1 cup cashews (raw or roasted)
INSTRUCTIONS

Add all the chicken ingredients together in frying pan and cook on medium heat until chicken is ready

Add the broccoli, green onion, carrot, snap peas and the avocado to a frying pan on medium heat and soften

Mix the rest of the ingredients under "veggies"

Reduce the heat of the frying pan and add the mixture

Once everything is cooked add to a bowl and top with cashews
