Raw Vegan Nachos with Walnut Meat

You have to try some of these simple raw vegan nachos with walnut meat because they are quick and make the perfect snack or side!

They require no baking and consist of avocado (duh!), walnut "meat" and chunky salsa.

The best part is that you can separate the toppings from the chips and easily pack this as a lunch or snack for your workday!

INGREDIENTS  

Base

  • corn chips

Chunky Salsa

  • 1 bell pepper, diced
  • 2 cups cherry tomatoes, diced
  • 1 cup cilantro, diced
  • 1 tbsp cumin
  • 2 cloves garlic, minced
  • 1 lime, juiced
  • 1/2 cup white onion, diced
  • 1/4 tsp cayenne
  • salt to taste

Walnut Meat

  • 1 cup raw walnuts
  • 1 tbsp cumin
  • 1 tbsp chili powder
  • 1 tbsp paprika
  • 1 tsp garlic powder

Optional

  • 1/2 avocado to serve

INSTRUCTIONS

  1. Add all the ingredients in the Chunky Salsa together and stir
  2. In a food processor blend together everything in the walnut meat
  3. To serve, add some corn chips, salsa, walnut meat and avocado to a plate and enjoy
