Raw Vegan Cookie Bars

I am personally not a huge fan of baking so anytime I can make a dessert that doesn't require an oven, I am all over it and that is why I love these Raw Vegan Cookie Bars!

These Raw Vegan Cookie bars are of course dairy-free and gluten-free and make the perfect treat on the go, with coffee or treat to bring to your next holiday gathering.

Feel free to get creative and play around with some toppings in each layer as well (can you say peanut butter cup chunks, toasted pecans, or coconut flakes?!)

INGREDIENTS

Base

  • 1 1/2 cups almond or chickpea flour
  • 1 1/2 tbsp coconut oil, melted
  • 1/3 cup maple syrup

Middle Layer

  • 1/3 cup peanut butter
  • 2 tbsp coconut oil, melted
  • 1 tsp vanilla extract
  • 1/4 cup maple syrup
  • 1 tsp cinnamon

Top Layer

  • 1/2 cup dairy-free chocolate chips, melted
  • 1 tbsp coconut oil, melted

INSTRUCTIONS

  • Line a baking dish with parchment paper
  • Mix all the base ingredients together and add to the base of the baking dish
  • Freeze for about 15 minutes
  • In the meantime mix all the middle layers together
  • Add over the base layer and freeze for about 30 minutes
  • In the meantime mix the top layer ingredients together
  • Add to the baking dish and freeze until well set
  • Cut into bars and store in the fridge or freezer
