PECAN PEACH CHIA PUDDING
Let’s spice up the plain old chia pudding recipe you keep eating with this Pecan Peach Chia Pudding. I love this recipe because it includes fresh fruit and is sweetened with some homemade caramelized pecans. Plus, chia pudding is always my go-to simple snack recipe that is filling and easy to pack on the go.
- 1/4 cup chia seeds
- 3/4 cup coconut milk
- 1 small peach, diced
- 1/4 cup pecans
- 1 tbsp maple syrup
- 1/4 tsp vanilla extract
In a bowl or mason jar add coconut milk, chia seeds and vanilla extract and stir well. Let sit for at least 2 hours or overnight
Before serving add pecans and maple syrup to a frying pan on medium heat and cook until the maple syrup begins to bubble.
Let pecans cool and harden
Once pecans are ready assemble your chia pudding bowl or mason jar
