Peanut Rice Noodle Bowl

Try this Asian-inspired peanut rice noodle bowl that is quick, delicious, and comforting!
Here is what you will need…
INGREDIENTS
Main Ingredients
- 1/4 red onion sliced
- 1 red bell pepper sliced
- 1 carrot peeled and sliced
- 1/2 package rice noodles of choice
- 1 tbsp avocado oil
- peanuts for topping or nut of choice
Dressing Ingredients
- 2 tbsp sesame oil
- 2 tbsp peanut butter or nut butter of choice
- 1 lime juiced
- 1.5 tbsp maple syrup
- 2 tsp chili powder
- 1/2 tsp cayenne powder or you can use chili flakes
- 2 tbsp tapoica flour or starch
- 1/2 tsp ginger powder
- 1 tsp garlic powder
- 2 tbsp tamari or coconut aminos
- 2 tso apple cider vinegar
INSTRUCTIONS

Bring a large pot of water to a boil

Add 1/2 package of rice noodles of choice and cook as per package instructions

In a frying pan add avocado oil and onion

Once the onion is translucent add carrot and bell pepper

In the meantime add all the dressing ingredients together and stir well

Once vegetables and rice noodles are cooked, remove them from heat

Mix in the dressing

Top with peanuts or nut of choice
