Peanut Rice Noodle Bowl

Here is what you will need…


Main Ingredients

  • 1/4 red onion sliced
  • 1 red bell pepper sliced
  • 1 carrot peeled and sliced
  • 1/2 package rice noodles of choice
  • 1 tbsp avocado oil
  • peanuts for topping or nut of choice

Dressing Ingredients

  • 2 tbsp sesame oil
  • 2 tbsp peanut butter or nut butter of choice
  • 1 lime juiced
  • 1.5 tbsp maple syrup
  • 2 tsp chili powder
  • 1/2 tsp cayenne powder or you can use chili flakes
  • 2 tbsp tapoica flour or starch
  • 1/2 tsp ginger powder
  • 1 tsp garlic powder
  • 2 tbsp tamari or coconut aminos
  • 2 tso apple cider vinegar


  • Bring a large pot of water to a boil
  • Add 1/2 package of rice noodles of choice and cook as per package instructions 
  • In a frying pan add avocado oil and onion
  • Once the onion is translucent add carrot and bell pepper 
  • In the meantime add all the dressing ingredients together and stir well 
  • Once vegetables and rice noodles are cooked, remove them from heat 
  • Mix in the dressing 
  • Top with peanuts or nut of choice 
  • Enjoy!
