No-Fuss Healthy Chicken and Rice Soup

If you're looking for something comforting AND simple to cook for dinner this weekend then you need to try this no-fuss Healthy Chicken and Rice Soup.

All you need is a slow cooker, broth, water, chicken, veggies, broth and some dried herbs!⁠

INGREDIENTS

  • 1 package ground chicken (you can also use chicken breast)
  • 4 large carrots peeled and diced
  • 4 large celery stalks diced
  • 1 small red onion, diced
  • 3 cups chicken broth
  • 5-6 cups water
  • 1 cup uncooked rice
  • 1 tbsp thyme
  • 1 tbsp oregano
  • 1 tbsp garlic powder
  • salt and pepper to taste

INSTRUCTIONS

  • Add all the ingredients to a slow cooker and cook on high for 4-6 hours or until chicken is cooked
  • Break up chicken once it begins to soften or if you are using chicken breast then shred chicken closer to the end
