Loaded Breakfast Bowl

This healthy loaded breakfast bowl includes pico de gallo, eggs, potatoes, roasted red pepper sauce and more!

Loaded Breakfast Bowl


  • 1 egg
  • 1 cup potatoes sliced thin
  • 2 tbsp jalapeno diced
  • 2 tbsp red onion diced
  • 1/4 roma tomato diced
  • 1/4 lime juiced
  • 1/4 red pepper diced
  • 1 tbsp fresh cilantro optional
  • 1/4 tsp chili powder
  • sea salt and pepper to taste
  • 1 tbsp olive or avocado oil
  • 1 tbsp roasted red pepper hummus linked below
  • 1 tsp paprika
  • 1 slice vegan cheese


  • Add chili powder, cilantro, sea salt, black pepper, lime, red pepper, red onion, jalapeno to a bowl and set aside
  • Add oil to a frying pan and add potatoes, paprika, salt and pepper
  • In a separate frying pan add oil and cook egg as desired
  • Once potatoes are cooked, clump in the middle of hte frying pan and place slice of cheese overtop until it melts
  • Remove potatoes and cheese from the frying pan into a bowl and top with veggie mixture, red pepper hummus (linked below), and egg.
