Lazy Leftover Sausage Pasta

If you ever make a whole package of sausage for dinner and end up with a bunch of leftovers then you need to try this Lazy Leftover Sausage Pasta!

One of my favourite ways to repurpose sausage whether it was pan-fried, baked or BBQ'd is to cut it up and use it in pasta the next day. Since the sausage is usually packed with flavour already, it makes the perfect addition to pasta when you're feeling a bit lazy the next day.

Plus it also adds a healthy source of fats and protein to an otherwise fairly plain dish.

All you have to do is cook whatever veggies you have left in your fridge, add some seasoning and sauce, cook pasta and add in your reheated sausage. Viola! You have a healthy, comforting and delicious dinner that also helps reduce food waste!



INGREDIENTS

  • 2-3 cooked sausage, sliced
  • 4 cups veggies of choice, diced
  • 2 cloves garlic, minced
  • 1 tbsp Italian seasoning
  • 1 tbsp avocado oil
  • 1 cup broth (optional)
  • 1-2 cups tomato sauce (depending on how saucy you like it)
  • 1/4 cup nutritional yeast or cheese (optional)
  • salt and pepper to taste
  • 1 package pasta of choice, cooked

INSTRUCTIONS

  1. Sautee the salt, pepper, garlic, and veggies in avocado. You can also add the broth for extra flavour.
  2. Next stir in your leftover sausage, sauce, nutritonal yeast or cheese (optional) until sausage is fully reheated
  3. Mix in cooked pasta and enjoy!
