Healthy Stuffed Acorn Squash

I don't want to toot my own horn but this Healthy Stuffed Acorn Squash recipe is super simple, delicious and comforting and can be easily customized based on your dietary needs.

You can use whatever meat you want to stuff it, whatever veggies you want to mix in and whatever type of cheese you want to melt on top!



  • 1 acorn squash
  • 1 tbsp avocado oil
  • salt and pepper

Beef (or ground meat of choice)

  • 1 package ground meat
  • 1 tsp garlic powder


  • 2 cups veggies of choice (I like onion, broccoli and pepper)
  • 1 tbsp avocado oil


  • 2 slices cheese of choice


  1. Preheat oven to 400F
  2. Line a baking sheet with parchment paper
  3. Cut the acorn squash in half and remove seeds and then cover the inside with oil, salt, and pepper
  4. Place face down on the baking sheet and bake for about 35 minutes or until softened
  5. In the meantime add beef and garlic to one frying pan and cook until done
  6. In another frying pan on medium heat add oil and veggies and cook until softened
  7. Once veggies and beef are done, mix together.
  8. Once squash is done add beef mixture to the inside of the squash and cover with cheese and put back in the oven for another 5 minutes or until cheese is melted
  9. Enjoy
