Healthy Potato Salad

We all love a classic potato salad but when you make it yourself you have control over what actually goes in it which is why I made this healthy potato salad! You can use regular mayo or vegan mayo, less salt, more veggies, or whatever you want! Try out my simple Healthy Potato Salad as the perfect classic side dish.

INGREDIENTS

  • 680 grams mini potatoes, halved
  • 2 tbsp mayonnaise
  • 1 tbsp dried or fresh dill
  • 2 tbsp apple cider vinegar
  • 2 cloves garlic, minced
  • 1/4 green onion, diced
  • 1/4 cup fresh parsley, diced
  • 1/4 red onion, diced
  • 1-2 celery stalks, diced
  • salt and pepper to taste

INSTRUCTIONS

  • Boil potatoes until softened
  • While the potatoes cool mix all the other ingredients
  • Once potatoes have cooled mix everything together
  • Store in the fridge
