Gluten-Free Crusted Sole

Growing up sole was always my favourite fish and although I love a classic non-breaded sole, I often crave breaded fish. Luckily there are many gluten-free options on the market but they aren't the healthiest. That is why I created this simple Gluten-Free Crusted Sole recipe which you could also use on other white fish!

INGREDIENTS

  • 6-8 pieces of sole
  • 1 tbsp avocado or olive oil
  • 2 eggs
  • 1 cup almond flour
  • 2 tbsp coconut flour
  • 1 tsp garlic powder
  • 1 tsp paprika
  • 1/2 tsp salt

INSTRUCTIONS

  1. Preheat oven to 425F
  2. Line a large baking sheet with parchment paper
  3. Combine almond flour, coconut flour, salt, garlic powder and paprika in one bowl
  4. In a separate bowl whisk eggs and oil together
  5. Add sole to egg then dry mix and repeat again
  6. Place on a baking sheet and do for the remaining pieces
  7. Bake for 20 minutes or until cooked
