Easy Sushi Vegan Bowl

If you're craving sushi but want to make it a bit healthier then try this Easy Sushi Vegan Bowl!

This recipe is insanely easy, tasty, and filled with fiber, protein, and healthy fats.

If you aren't vegan you can also add fish for additional protein!

INGREDIENTS

Bowl

  • 2 cups cooked sticky rice (or rice of choice)
  • 1/2 cucumber, sliced
  • 1/2 large carrot, sliced
  • 1 avocado, sliced
  • nori
  • 2 cups cooked edamame

Sauce

  • 1 tbsp maple syrup
  • 1 tbsp apple cider vinegar
  • 1 tbsp sesame oil
  • 1 tbsp tamari
  • 1/4 green onion, diced
  • 1/4 ground ginger

INSTRUCTIONS

  1. Mix all sauce ingredients well
  2. Divide ingredients into two bowls and pour sauce on top
