Dairy-Free Healthy Cobb Salad

Salads aren't just for the summer and you can enjoy this Dairy-Free Healthy Cobb Salad all year round! Try this super comforting and satisfying healthy cobb salad that is both gluten-free and dairy-free.⁠

The best part of this salad is that you can prep a lot of it ahead of time so that you can assemble it before work or school in the morning. I recommend cooking some chicken, bacon, and eggs at the beginning of the week as well as making a couple of batches of the salad dressing. You can also cut up some of the tomatoes and cucumbers ahead of time to make lunch that much easier!

INGREDIENTS

Salad Dressing

  • 1 tbsp apple cider vinegar
  • 1 clove garlic, minced
  • 1 tbsp avocado or olive oil
  • 1 tbsp honey dijon mustard
  • 1 tbsp shallot, diced or white onion
  • salt and pepper to taste

Salad

  • 2 cups romaine, chopped
  • 1/2 tomato, diced
  • 1/3 cucumber, diced
  • 1 hard-boiled egg, sliced
  • 1/4 chicken breast, sliced
  • 2 sliced of cooked bacon, chopped
  • 1/2 avocado, sliced
  • 1/4 cup vegan cheese, shredded

INSTRUCTIONS

  1. Add all the ingredients in the salad dressing together and mix well
  2. Next, combine all the salad ingredients and salad dressing
  3. Enjoy!
