I am so excited to share this perfect Dairy-Free Greek Salad recipe!
Serve this as a side dish and add some tofu, chicken, or chickpeas for some protein.
This recipe is pretty much all raw making it quick, easy and refreshing!

- 1 tbsp olive oil or avocado oil
- 2 cloves garlic minced
- 1/4 cup olives
- 1 tsp dried oregano
- 1/4 cup fresh parsley packed
- 1 cucumber chopped
- 1 tbsp apple cider vinegar
- 1/2 red onion diced
- 2 roma tomatoes diced
- 1/2 lemon juiced
- sea salt and pepper to taste
- feta optional
- 1 cup romaine optional
Add all the ingredients except the romaine and mix well
Optional: serve on a bed of romaine
Optional: add tofu, chickpeas or chicken
