These crunchy chicken lettuce wraps are not only filling but super fresh and make the perfect summer lunch or dinner!
They are also super fun to make and full of flavour.

- 4-6 radish, cut into matchsticks
- 1/2 cucumber, cut into matchsticks
- 1/2 large carrot, cut into matchsticks
- 8-10 lettuce leaves
- 1 tbsp avocado oil
- 1 tbsp sesame oil
- 1 tsp garlic powder
- 1/4 tsp ginger powder
- 1.5-2 tbsp peanut butter
- 1 tbsp tamari
- 1 package raw chicken strips
- 1/2 package vermicelli noodles, cooked
- tamari for topping
Add avocado oil, chicken, garlic powder, and ginger powder to a frying pan and cook until chicken is ready
Once the chicken is done, turn down or turn off the heat and add tamari, peanut butter, and sesame oil. Stir until the peanut butter is melted.
Place lettuce leaves on a plate and then add vermicelli noodles, veggies, and chicken. Add additional tamari if you wish.
