Coconut Curry Soup

Coconut Curry Soup

INGREDIENTS

  • 1/2 onion diced
  • 3 cloves garlic minced
  • 1 cup vegetable broth
  • sea salt and pepper to taste
  • 1 tsp ground ginger
  • 1 tbsp curry powder
  • 1 tsp ground turmeric
  • 1 can coconut milk
  • 2 cup potatoes chopped
  • water
  • 2 cups cooked shrimp defrosted

INSTRUCTIONS

  • Add everything to a large pot except the shrimp
  • Add water until potatoes are covered
  • If the shrimp is still frozen but precooked, heat up in a frying pan
  • Bring the large pot to a boil then bring down to medium heat until the potatoes are cooked
  • Remove from heat and top with shrimp
